Catfish Stew
Catfish Stew is an moderately easy dinner. Made with 3 lb. catfish fillets, cut in 1-inch pieces, 1 qt. tomatoes, 1 c. chopped fatback, 2 c. chopped onions and 2 c. diced potatoes, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In a large pot, brown fatback; remove and drain.
Add onions and potatoes and cook until tender.
Add tomatoes, catsup and drained fatback and cook for 10 minutes.
Add fish and cook for 45 minutes to 1 hour, uncovered, and on low heat.
Add all remaining ingredients.
Salt and pepper to taste.
Serve over rice or with hush puppies.
Serves 5 to 7.
