Carrots Parmesan
Carrots Parmesan is an moderately easy dinner. Made with 20 large carrots, scrubbed and cut into 3 to 4 pieces, 1 tsp. sugar, 1 1/2 pt. heavy cream, 1 1/2 c. grated parmesan cheese and 1 large onion, grated, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Boil carrots in salted water, to which sugar has been added, until tender.
Drain and put through a food mill or grate in a fairly fine grater.
Stir in cream cheese and grated onion and season to taste.
Pour into large greased casserole.
Arrange pecan halves on top.
Bake at 350Β° for 45 minutes to 1 hour.
Serves 12.
