Carrot Spice Cake
Carrot Spice Cake is an moderately easy dinner. Made with 4 eggs, 2 c. sugar, 2 c. finely shredded carrots, 1 1/2 c. salad oil and 1 c. finely chopped nuts, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Beat eggs slightly; add sugar, carrots, oil and nuts.
Mix well.
Mix dry ingredients.
Add dry ingredients gradually to carrot mixture and beat until smooth.
Turn into ungreased 10-inch tube pan and bake in moderate oven at 350Β° for 1 hour and 15 minutes or until cake springs back when touched lightly.
Cool 10 minutes.
Turn out of pan.
Cool thoroughly.
This cake is like a steamed carrot pudding.
May be iced with cream cheese frosting, but excellent without the frosting.
We have it every year for Thanksgiving.
