Carrot Soup
Carrot Soup is an moderately easy dinner. Made with 3 tbsp. butter, 4 c. sliced carrots, 1 c. chopped onion, 1/8 tsp. thyme and 8 c. chicken broth, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Melt butter in large pan over low heat.
Stir in onion, carrot, thyme, salt and pepper.
Cover and cook 10 minutes.
Add broth and rice.
Simmer until rice is tender 40 to 50 minutes. Put mixture in blender a little at a time.
Blend until smooth. Serves 8.
