Carrot Soufflé
Carrot Soufflé is an moderately easy dinner. Made with 3 1/2 lb. carrots, 1 1/2 lb. sugar (about 3 c.), 1 tbsp. baking powder, 1 tbsp. vanilla and 1/4 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Peel carrots and boil until extra soft.
While carrots are warm, add sugar, baking powder and vanilla.
Whip with mixer until smooth.
Add flour and mix well.
Beat eggs and add to carrot mixture.
Blend well and add softened butter.
Pour mixture into a 9 x 13 dish.
Bake at 350° for 1 hour or until golden brown.
Sprinkle with powdered sugar.
