Carrot-Pecan Cookies
Carrot-Pecan Cookies is an moderately easy dinner. Made with 1 1/2 c. flour, 1 tsp. baking powder, 1/4 tsp. baking soda, 3/4 tsp. ground cardamom (optional) and 1/4 tsp. ground cinnamon, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In a bowl, combine flour, baking powder, baking soda, salt, cardamom and cinnamon; set aside.
In a second bowl, beat butter with brown sugar until light and fluffy.
Add egg and vanilla extract and beat well.
Add flour mixture in 2 or 3 batches.
Stir in carrots, pecans and raisins.
Drop by tablespoons, 2 inches apart onto lightly greased cookie sheet.
Bake in 325Β° oven for 20 to 25 minutes.
Makes 3 dozen.
