Carrot-Coconut Bread
Carrot-Coconut Bread is an impressive dinner. Made with 3 eggs (room temperature), 1/2 c. oil, 1 tsp. vanilla, 2 c. shredded carrots and 2 c. coconut, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Beat eggs until light in color.
Stir in oil and vanilla. Blend in carrots, coconut, raisins and nuts.
Stir in flour, baking soda, baking powder, cinnamon, salt and sugar.
Blend well. Spoon batter into 9 x 5-inch loaf pan.
Bake at 350Β° for 1 hour or until golden brown.
Remove loaf from pan.
