Carrot Casserole
Carrot Casserole is an easy dinner. Made with 4 or 5 medium carrots, 1/2 c. crushed ritz crackers, 1 glass old english cheese and butter, salt and pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Boil carrots until tender.
Drain liquid and save.
Mash carrots and season with butter, salt and pepper.
Add crackers and cheese and mix well.
Add liquid to moisten.
Put in baking dish, sprinkle with little more cracker crumbs.
Bake in 350Β° oven for 1/2 hour.
Serves 4 to 6.
