Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 2 c. plain flour, 2 c. sugar, 1/2 tsp. salt, 1 tsp. soda and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Sift dry ingredients together.
Beat eggs and oil together and add sifted dry ingredients; fold in carrots.
Grease and flour 2 or 3 cake pans and bake from 25 minutes to 35 minutes or until toothpick comes out clean.
You may also use a 9 x 13 x 2-inch pan and bake for 35 minutes.
