Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 3 c. grated carrots, 2 c. sifted flour, 2 c. sugar, 2 tsp. baking soda and 4 eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 350Β°.
Beat together eggs, sugar and oil.
Add the carrots (the carrots may be grated in the blender or a meat grinder, but hand grating is the best and it usually takes a one pound package of carrots).
Add the flour, salt and cinnamon. Beat the mixture until frothy.
Bake in 8 x 13-inch pan for 40 to 45 minutes.
Frost with Cream Cheese Frosting.
