Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 2 c. sugar, 1 1/2 c. oil, 1 tsp. vanilla, 4 eggs, lightly beaten and 2 c. flour, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Mix the sugar, oil, vanilla and eggs together.
Sift the flour, baking soda, baking powder, cinnamon and salt together.
Add the mixtures together and mix well.
Add the coconut, carrots and nuts. Pour mixture into 9 x 13 pan and bake 1 hour at 300° or 2 round cake pans at 350° for 30 to 35 minutes.
