Carrot Cake
Carrot Cake is an moderately easy dinner. Made with 2 c. flour, 2 c. sugar, 2 tbsp. baking soda, 1 tsp. salt and 2 tsp. ground cinnamon, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Stir flour, sugar and cinnamon in small bowl.
In large bowl, beat eggs and oil until frothy.
Gradually add flour mixture. Beat until smooth.
(May add a little milk.)
Mix in nuts, carrots and raisins.
Pour into two greased and floured 8-inch round pans. Bake at 350Β° for 25 to 30 minutes.
Double recipe makes 3 layers and 6 cupcakes.
Cool in pans 10 minutes and remove and cool on rack.
