Caramel Popcorn
Caramel Popcorn is an moderately easy dinner. Made with 1 c. margarine, 1/2 c. light or dark corn syrup, 1/2 tsp. soda, 6 qt. popped corn and 2 c. firmly packed brown sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Melt the margarine in a large saucepan. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 5 minutes.
Remove from heat. Stir in baking soda and vanilla. Gradually pour over popped corn in 2 large shallow baking pans.
Mix well. Bake at 250Β° for 1 hour, stirring every 30 minutes. Remove from oven. Cool completely. Break apart and store in tightly covered container.
