Caramel Popcorn
Caramel Popcorn is an moderately easy dinner. Made with 1 c. butter or margarine, 1 1/4 c. sugar, 1 1/2 to 2 c. peanuts, 1/2 c. light corn syrup and 4 qt. salted popcorn, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Pop the popcorn first.
In microwavable mixing bowl, combine butter, syrup and sugar.
Microwave on High for 15 minutes (or until brittle threads form when small amount is dropped into cold water), stirring every 3 minutes.
Combine popcorn and peanuts in large bowl.
Stir vanilla into cooked mixture and immediately pour over popcorn/peanuts.
Stir until evenly coated.
Let cool.
Store in an airtight container.
