Caramel Mocha Sundaes
Caramel Mocha Sundaes is an moderately easy dinner. Made with 1 c. coffee brew, 1 c. firmly packed brown sugar, 1/2 tsp. vanilla, 1 tbsp. brandy (optional) and 4 large scoops coffee ice cream, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix coffee and brown sugar in a medium saucepan.
Bring to a full rolling boil.
Continue cooking until mixture begins to thicken and becomes syrupy, 10 to 15 minutes.
Remove from heat. Mix in vanilla and brandy (if used).
Cool to room temperature. Pour syrup over ice cream in 4 sundae dishes, reserving a little. Dollop or pipe whipping cream over each serving.
Drizzle with remaining syrup.
Sprinkle with any topping you please.
