Caramel Corn
Caramel Corn is an moderately easy dinner. Made with 6 qt. freshly popped corn, 1 1/2 c. pecan halves, 1 1/2 c. raw peanuts, 1 1/2 c. firmly packed brown sugar and 3/4 c. butter or margarine, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Combine popcorn and pecans in a lightly greased large roasting pan; set aside.
Combine peanuts and the next 3 ingredients in a large saucepan.
Bring to a boil over medium heat, stirring constantly.
Boil for 5 minutes, stirring occasionally.
Remove from heat.
Stir in vanilla and soda.
Pour peanut mixture over popcorn mixture; stir with a lightly greased long handled spoon until popcorn mixture is coated.
Bake at 250Β° for 1 hour, stirring every 15 minutes.
