Cut bell peppers into broad pieces and pat them dry.
Mash potatoes with peanuts, chiles, ginger, bhaja masala, and salt for the filling.
Stuff the pepper pieces, then coat them in a turmeric gram-flour and rice-flour batter.
Fry in hot oil until crisp and golden, then drain and serve with kasundi.
