Candle Wreath Salad
Candle Wreath Salad is an moderately easy dinner. Made with 1 1/2 c. washed, torn mixed salad greens (per serving), raspberry vinaigrette, canned hearts of palm, cut in 1/2 to make shorter "candles", pinenuts and sun-dried tomatoes, reconstituted in boiling water several minutes and chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Toss greens with desired amount of vinaigrette.
Arrange greens on salad plates.
Place 1/2 heart of palm in center of each plate.
Make a small slit in top of "candle" and insert a "flame."
Sprinkle greenery "wreath" with sun-dried tomatoes and pine nuts.
