Cook the sweet potatoes just long enough to be tender; peel, then cut crosswise and lengthwise to form chunks.
Put into a 2-quart casserole dish or pan; dot with butter.
Mix together the corn syrup, maple flavoring and bourbon, if used; pour over potatoes.
Bake at 350Β° for 45 to 60 minutes.
Garnish with parsley.
