California Rice Casserole
California Rice Casserole is an moderately easy dinner. Made with 1 c. chopped onion, 1/4 c. margarine, 4 c. cooked rice, 2 c. sour cream and 1 c. cottage cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute onion and margarine.
Remove skillet from heat and stir in all other ingredients but peppers and cheese.
Lightly grease a 13x9 pan.
Lay half of rice mixture in casserole then top with half of pepper and half of the cheese.
Repeat with second layer of rice, peppers and cheese.
Bake uncovered at 375 degrees for 25 minutes.
