Caliente Pickles
Caliente Pickles is an moderately easy dinner. Made with 3/4 c. salt (plain), 1 gal. water, cucumbers, 1 1/2 qt. vinegar and 3/4 c. salt (plain), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Soak pickles overnight in 3/4 cup salt and 1 gallon of water. In a saucepan, boil 1 1/2 quarts vinegar, 3/4 cup salt, sugar, 2 1/2 quarts water and pickling spice (in a cloth).
In canning jars, put in dill weed or dill seed, garlic, mustard seed and cucumbers.
Pour liquid mixture into jars and seal.
Process 20 minutes.
