Calico Salad
Calico Salad is an moderately easy dinner. Made with 2 (16 oz.) cans mixed vegetables, drained, 1 (15 oz.) can kidney beans, drained, 1 medium green pepper, chopped, 1 small onion, chopped and 1/2 c. celery, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine vegetables in large bowl and toss lightly.
Combine sugar, flour, mustard and salt in small saucepan.
Gradually add vinegar.
Cook over medium heat, stirring constantly until smooth and thickened.
Pour hot mixture over vegetables and stir gently. Cover and chill overnight.
