Cajun Chicken
Cajun Chicken is an moderately easy dinner. Made with 6 to 8 chicken breasts, 1 large can tomatoes, 1 bell pepper, sliced, 1 medium onion, sliced and 1 c. celery, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Batter and fry chicken as normal.
Remove from frying pan. Add oil.
Add pepper and onion (slice the same so they will cook evenly).
Stir until onion and pepper are done.
Add tomatoes, hot sauce, salt, black pepper and bay leaf.
Cook on low heat until boiling.
Add chicken.
Cook until thick.
Serve over rice.
