Select a small barrel cactus.

Remove spines and green outside layer with sharp knife.

Cut pulp across in slices 1 inch thick. Soak overnight in cold water.

Remove from water; cut into 1-inch cubes and cook in boiling water until tender.

Mix together the sugar, water and juices and add cactus.

Cook slowly until nearly all syrup is dissolved being careful not to scorch.

Remove cactus from syrup; drain and roll in powdered or granulated sugar.

For colored candy, add vegetable coloring.
