Butterscotch Bars
Butterscotch Bars is an moderately easy dinner. Made with 1/2 c. butter or margarine, 2 c. brown sugar, packed, 2 eggs, 1 tsp. vanilla and 2 c. all-purpose flour, sifted, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a 2-quart saucepan, melt butter.
Remove from heat; stir in brown sugar.
Add eggs, one at a time, beating well after each addition; add vanilla.
Sift together flour, baking powder and salt.
Add flour mixture, coconut and peanuts to ingredients in saucepan.
Mix thoroughly.
Spread in a greased 15 1/2 x 10 1/2 x 1-inch baking pan.
Bake in 350Β° oven for 25 minutes.
Cut bars while warm.
Dust with powdered sugar.
Remove from pan when almost cool.
Makes 3 dozen.
