Buttermilk Loaf Cake
Buttermilk Loaf Cake is an moderately easy dinner. Made with 1 1/2 c. butter or margarine (at room temperature), 3 c. sugar, 6 eggs, 1 1/2 tsp. vanilla flavor and 1 1/2 tsp. fresh lemon juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cream butter.
Gradually add sugar, beating until light and fluffy.
Add eggs, one at a time, beating well after each addition. Blend in vanilla, lemon juice and rind.
Sift together dry ingredients; add alternately with buttermilk to creamed mixture. Turn batter into 2 greased and floured 9 x 5 x 3-inch loaf pans. Bake in 350Β° oven for 1 hour and 10 minutes or until wooden pick inserted in center comes out clean.
Cool in pans 10 minutes; remove and continue cooling on racks.
