Broiled Pineapple with Rum
Broiled Pineapple With Rum is an easy dinner. Made with 1 ripe pineapple, 4 to 6 tbsp. jamaican rum, 4 tbsp. brown sugar and 1 pt. premium vanilla ice cream, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat broiler.
Split pineapple lengthwise.
Remove and cube the yellow fruit, leaving the skin intact.
Toss fruit and rum, then put it back into the "shells."
Wrap the leaves in foil.
Put the filled halves on a broiler pan; sprinkle with brown sugar and broil until sugar melts.
(If pineapple is too close to the heat, the rum will ignite.
Just lower the pan.)
Remove foil and serve at once with ice cream.
