Broccoli Soup
Broccoli Soup is an moderately easy dinner. Made with 1 (10 oz.) pkg. frozen chopped broccoli, thawed, 2 1/4 c. skim milk, 1 tbsp. margarine, 1 (2 oz.) envelope instant mashed potato flakes and 2 tsp. instant minced onion, this recipe delivers authentic, satisfying flavors. Cook broccoli according to package direction; omit salt, set aside.
Combine milk and margarine in a saucepan; cook over medium heat, stir constantly until heated through (don't boil).
Stir in potato flakes and onion.
Place in blender; add broccoli and process 30 seconds, until smooth.
Return to saucepan.
Stir in broth, salt and pepper; simmer 10 minutes, stir often.
