Broccoli-Rice Quiche
Broccoli-Rice Quiche is an moderately easy dinner. Made with 1 1/2 c. hot cooked rice (cook 1/2 c.), 3 oz. grated sharp cheddar cheese, 3 eggs, salt and pepper to taste and 3 fluid oz. skim milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine rice, half of cheese, 1 egg (slightly beaten), salt and pepper.
Together press firmly in an even layer on bottom
9-inch pie pan (or quiche pan).
Beat 2 eggs slightly.
Stir in broccoli, milk and mushrooms.
Season with salt and pepper.
Spoon over rice mixture in pan.
Bake for 20 minutes
Remove
Sprinkle with remaining cheese and bake 10 minutes longer.
Serves 4.
