Broccoli-Mushroom Noodle Casserole
Broccoli-Mushroom Noodle Casserole is an impressive dinner. Made with 2 stalks fresh broccoli, 1 lb. fresh sliced mushrooms, 1 large chopped onion, salt and pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Saute broccoli, mushrooms, onion and salt lightly in margarine. Drain.
Toss with white wine.
Beat eggs.
Whisk in Ricotta cheese and sour cream.
Boil raw noodles; drain.
Mix together the broccoli mixture, egg mixture, the noodles and 2 tablespoons bread crumbs.
Spread into a buttered 9 x 13-inch baking pan.
Top with Cheddar and 2 tablespoons bread crumbs.
Bake, covered, for 30 minutes and uncovered 15 minutes more in a 350Β° oven.
