Broccoli-Corn Scallops
Broccoli-Corn Scallops is an moderately easy dinner. Made with 10 oz. pkg. frozen chopped broccoli, 2 eggs, beaten, 1 c. finely crushed whole wheat crackers, 1/2 c. milk and 1/2 tsp. minced dried onion, this recipe delivers authentic, satisfying flavors. Cook broccoli according to package directions.
Drain well. Spread broccoli over bottom of a 10 x 6 x 2-inch baking dish.
In a mixing bowl, combine eggs, 1/2 cup crushed crackers, milk and onion.
Stir in both corns.
Spread mixture over broccoli. Combine remaining crackers and butter; sprinkle on top of vegetables.
Bake uncovered at 350Β° for 35 minutes until knife inserted in middle comes out clean.
