Broccoli Corn Bread
Broccoli Corn Bread is an moderately easy dinner. Made with 2 eggs, 1 c. cottage cheese, 1 pkg. frozen chopped broccoli, thawed, 3/4 c. chopped onion and 1/2 c. oleo, melted and divided, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a mixing bowl, lightly beat eggs.
Add cottage cheese, broccoli, onion, 6 tablespoons oleo and muffin mix.
Beat well. Pour remaining oleo into a 10-inch iron skillet; pour batter into skillet.
Bake at 350Β° for 40 to 45 minutes or until golden.
Cut into wedges and serve warm.
