Broccoli Corn Bread
Broccoli Corn Bread is an moderately easy dinner. Made with 1 box corn muffin mix or 2 c. yellow corn meal mix, self-rising, 1 box chopped broccoli, cooked and drained (1 c.), 1 stick softened margarine, 4 eggs and 1 large onion, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Blend meal and margarine with a fork until crumbly, add beaten eggs, mix well; add other ingredients.
Bake in a well-greased and floured pan that won't stick.
Bake 45 minutes at 400°.
(I use Teflon cake pan , 10-inch, sprayed with Pam and cook at 375° for 30 minutes.
Just watch and test for doneness.)
