Broccoli Bisque
Broccoli Bisque is an moderately easy dinner. Made with 1 1/4 to 1 1/2 lb. fresh broccoli, chopped, or 2 (10 oz.) pkg. frozen chopped broccoli, 2 (13 3/4 oz.) cans chicken broth, 1 medium onion, quartered, 2 tbsp. butter or margarine and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Place broccoli in a large saucepan.
Add broth, onion, butter or margarine, salt, curry powder and pepper.
Bring to boiling. Reduce heat and simmer, covered, for 8 to 12 minutes, or until just tender.
Place half the broccoli and broth mixture at a time in blender container.
Cover and blend.
Repeat with remaining broccoli mixture.
Stir in lime juice.
Cover and refrigerate at least 4 hours.
Top with lemon slice, spoonful of sour cream and sprinkling of chives.
