Breakfast Raisin Muffins
Breakfast Raisin Muffins is an moderately easy dinner. Made with 1 1/2 c. water, 1 c. raisins, 1 1/2 c. flour, 3/4 c. sugar and 1 tsp. ground nutmeg, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Bring water to boil.
Add raisins and return to boil.
Cover, reduce heat, simmer 20 minutes and strain.
Drain; reserve liquid. Add water to measure 1/2 cup, if necessary.
Dissolve soda in liquid.
Combine flour, sugar, nutmeg and cinnamon.
Stir in raisins.
Add to dry ingredients.
Stir well.
Spoon batter into greased muffin pans.
Bake at 350Β° for 20 to 25 minutes.
