Brown and crumble sausage (hot or mild; we prefer the hot); drain and cool.

Set aside.

Beat eggs and milk together with beater a couple of minutes.

Add salt and mustard and beat again. Trim crust off white bread and break into small pieces.

Add bread to egg mixture and stir until softened.

Stir in cheese, mushrooms and sausage.

Pour into a greased (with butter) 9 x 13-inch glass baking dish.

Cover with plastic wrap and refrigerate overnight. Bake at 350Β° uncovered for 40 to 45 minutes.

Let stand a few minutes before cutting.
