Bran Flake Muffins
Bran Flake Muffins is an moderately easy dinner. Made with 3 c. bran flakes, 1 c. boiling water, 1/2 c. shortening, 1 1/2 c. sugar and 2 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Pour boiling water over bran flakes and let stand 3 minutes; set aside.
In separate bowl, combine shortening, sugar and eggs; set aside.
Sift flour with soda and salt.
Now, combine all ingredients with buttermilk.
Bake in greased muffin pan in a preheated 400Β° oven for 20 minutes.
Makes about 2 1/2 dozen. Batter may be kept in refrigerator up to 4 weeks.
