Bob Hope's Lemon Pie
Bob Hope'S Lemon Pie is an moderately easy dinner. Made with 1 1/3 c. sugar, dash of salt, 6 tbsp. cornstarch, 1/3 c. lemon juice and 2 tbsp. oleomargarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Preheat oven to 325°.
Combine first three ingredients in boiler; add water.
Bring to a boil, stirring constantly.
Cook 2 minutes or until mixture is clear and thickens.
Stir small amount of mixture into beaten egg yolks.
Stir egg yolks into hot mixture.
Cook on low heat for 3 minutes.
Stir in 1/3 cup fresh lemon juice, oleo and grated lemon.
Pour into pie shell.
