Blueberry Gelatin Salad
Blueberry Gelatin Salad is an moderately easy dinner. Made with 2 (3 oz.) pkg. blueberry gelatin, 2 c. boiling water, 2 c. fruit juice (from drained fruits), with water added to make 2 c., 1 envelope knox gelatin and 1 (15 oz.) can blueberries, drained, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Dissolve gelatin in boiling water.
Add 2 cups juice; chill until partially set.
Add well drained fruits; mix and pour into a 9 x 13-inch pan.
Cover with plastic wrap; refrigerate at least overnight.
On the day this is to be served, prepare topping. (Mix cream cheese, sour cream, sugar and vanilla.)
Spread on top of gelatin; sprinkle with chopped nuts.
