Blackberry Jam Cake
Blackberry Jam Cake is an moderately easy dinner. Made with 1 c. butter, softened, 2 c. sugar, 4 eggs (at room temperature), 3 c. sifted cake flour and 3 tsp. baking powder, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Heat oven to 350Β°.
Lightly grease and flour three 9-inch layer pans.
In large bowl, cream butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Sift flour, baking powder, cinnamon, salt and cloves together 3 times.
Add flour mixture alternately with milk to cream mixture, beginning and ending with flour mixture.
Add lemon extract and lemon zest; fold in blackberry jam.
Mix well.
Pour batter into prepared pans.
Bake 25 minutes or until cake tests done.
Ice with frosting of your choice.
