Black-Eyed Pea Stew
Black-Eyed Pea Stew is an moderately easy dinner. Made with 1 lb. sausage, separated and browned in oil, 1/2 lb. black-eyed peas, soaked in water overnight, 1 medium onion, chopped, 1 red or green pepper, chopped and 6 mushrooms, sliced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cook black-eyed peas in water to cover; salt to taste until tender.
Set aside.
Brown sausage in small amount of oil.
Drain. Saute onion, pepper and mushrooms until just limp.
Add sausage, black-eyed peas and tomatoes all together and simmer until well blended (about 15 or 20 minutes).
Season with salt, pepper and a pinch of dried hot pepper flakes to taste.
