Black-Eyed Pea Corn Bread
Black-Eyed Pea Corn Bread is an impressive dinner. Made with 1 lb. pork sausage, 1 onion, 1 c. cornmeal, 1/2 c. flour and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cook sausage and onion until brown.
Drain and set aside. Combine cornmeal and other dry ingredients. Beat eggs, buttermilk and oil together. Combine this with dry ingredients (batter will not be smooth). Add sausage, onion, pepper, corn, cheese and peas. Put in a loaf pan.
Bake in a preheated 350Β° oven for 50 to 55 minutes until done.
(If you use a cornmeal mix, you can eliminate the salt and baking soda.)
