Made with 1 (16 oz.) pkg. black beans, 1 1/3 c. rice (precooked volume), 1 (13 1/2 oz.) can chicken broth, 2 medium onions, chopped and 1 medium carrot, chopped, this recipe delivers authentic, satisfying flavors. Soak beans according to package directions; drain off water. Place beans in a large pot.
Add enough fresh water to cover beans by about 2 inches.
Add carrot, onions, chicken broth, salt substitute and cayenne pepper.
