Black Bean Soup
Black Bean Soup is an moderately easy dinner. Made with 1 c. sliced leeks, 1/3 c. oil, 2 cloves garlic, peeled and crushed, 2 (1 lb.) cans black beans and 1/2 c. water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute the leeks in the oil in a large saucepan until golden. Add garlic and 1 can of beans with their liquid.
Mash up the beans with a fork.
Add the second can of beans with their liquid, but do not mash the beans.
Stir in the water, salt and pepper and simmer, covered, for 40 minutes, stirring occasionally.
Serve hot.
