Black Bean Chili Express
Black Bean Chili Express is an easy dinner. Made with 4 (15 oz.) cans black beans, rinsed and drained, 3 c. mild salsa, about 1 1/2 (12 oz.) jars, 1 (11 oz.) can vacuum packed corn kernels, drained, 1 (12 oz.) pkg. corn muffins and 1 c. grated jalapeño jack cheese (4 oz.), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Heat oven to 425°.
In 4-quart saucepan over high heat, cook beans, salsa and corn for 6 to 7 minutes stirring frequently until hot.
Meanwhile, arrange muffins on ungreased cookie sheet and place in oven to heat through for 5 to 8 minutes.
Remove bean mixture from heat.
Stir in 3/4 cup grated cheese until melted. Remove muffins from oven and sprinkle, if desired, with 1 tablespoon remaining cheese.
Serve chili sprinkled with remaining cheese and accompanied by hot muffins.
Makes 6 servings.
