Bell Pepper Relish is an moderately easy dinner. Made with 12 green bell peppers, 12 red bell peppers, 12 onions, 2 c. sugar and 2 c. vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Grind peppers and onions together.
Pour boiling water over enough to cover and let stand 5 minutes; drain.
Add sugar, vinegar and salt.
Boil all together 5 minutes.
Put into pint jars and seal.
Can be frozen also.
Makes about 8 pints.
