Beet Summer Delight(Serves 4) is an moderately easy dinner. Made with 1/3 c. coarsely chopped parsley, 1 can sliced or chopped beets (fresh beets when in season), 1 lb. spaghettini, 1/4 head escarole, chopped and 1 can anchovies, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In large skillet, simmer oil, garlic and anchovies, stirring gently.
Remove from heat when garlic is golden and set aside. Add beets with its juice, parsley, chopped escarole, salt and pepper.
