Beet Salad
Beet Salad is an moderately easy dinner. Made with 1 bunch young beets, tops removed and peeled, 2 c. red cabbage, shredded, 1 c. carrots, shredded, 1/2 c. lemon juice and 1/4 c. olive oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Grate beets real fine into a salad bowl.
Add cabbage and carrots.
Beat together the lemon juice, honey, oil and salt and pour over beet mixture.
Toss and chill.
Sprinkle seeds over top. Makes 8 to 10 servings.
