Beet Relish
Beet Relish is an moderately easy dinner. Made with 1 (1 lb.) can shoestring beets, 1 (1 lb.) can cut wax beans, drained, 1/4 c. white vinegar, 1/4 c. sugar and 1 medium onion, peeled, quartered and thinly sliced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Drain beets.
In small saucepan, mix liquid from beets with sugar, vinegar, cloves and salt.
Bring to a boil.
Mix beets with beans and onion and pour hot liquid over them.
Refrigerate, covered, for several hours or overnight.
Makes about 8 servings.
