Bean Soup
Bean Soup is an impressive dinner. Made with 1 lb. mixed beans, 9 c. water, 1 c. minced onion, 1 c. minced celery and 1 c. chopped carrots, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Rinse and pick over beans.
Put in a large pot with the water, onions and celery.
Simmer for 2 hours.
Add the remaining ingredients, except the lemon juice and scallions, and simmer, covered, for 1 hour.
Mash or purΓ©e half the soup in a food processor.
Combine with rest of soup.
Season with the lemon juice, salt and pepper.
Serve garnished with the minced scallions.
